Starting with only Prime steaks and seafood, combined with the creativity and ingenuity of Sony and the kitchen staff, the Santa Fe's menu and daily features offer a taste sensation not easily replicated. Many of the servers have long-time, loyal, repeat customers who are greeted by name and enjoy a comfortable meal tailored to each individual taste. New guests, in turn, are made to feel like they have been coming for years, and guided expertly through their first Santa Fe experience. Chef Zenon Ollis claims that his favorite part of the job is creating dishes for the Santa Fe's monthly wine dinners. "I really get to be creative then," he said, "I create two to three dishes for each course to be tasted and chosen."
