Starting with only Prime steaks and seafood, combined with the creativity and ingenuity of Sony and the kitchen staff, the Santa Fe's menu and daily features offer a taste sensation not easily replicated. Harms' and the Rego's hands-on approach to sampling and constant quality inspections keep the dishes at their best.

The third element in the Santa Fe's formula for longevity and success is having a qualified staff that truly cares. From the kitchen to the front door, The Santa Fe is spilling over with a seasoned, knowledgeable, friendly group of servers, bartenders, kitchen staff, and managers, whose goal is to provide each guest with an exceptional dining experience. Many of the servers have long-time, loyal, repeat customers who are greeted by name and enjoy a comfortable meal tailored to each individual taste. New guests, in turn, are made to feel like they have been coming for years, and guided expertly through their first Santa Fe experience. Chef Zenon Ollis claims that his favorite part of the job is creating dishes for the Santa Fe's monthly wine dinners. "I really get to be creative then," he said, "I create two to three dishes for each course to be tasted and chosen."

Lastly, the Santa Fe would not be what it is without its 600-plus selection, award-winning wine list, which is almost like another member of the Santa Fe Family. Given the Wine Spectator Magazine's Award of Excellence for eight years in a row, and their much-coveted Best of Award of Excellence for the past three years, the list showcases wines from around the world, hand-picked by Harms himself.
